Loaded Veggie Pizza (& I mean loaded!)

Ever been so sold on a certain brand you start to think of yourself as a rabid brand loyalist? Well, I have become obsessed with DeLallo. You may remember a certain post for homemade pimento cheese? Well, those piquillo peppers were so glorious, I decided to branch out and try other items. To the extent that I made a total veggie power pizza with some of their line. And you know what? Their other products live up to the piquillo pepper hype.

Here’s what I bought from the DeLallo line this week:
1.) can of artichoke hearts
2.) jar of sun-dried tomato bruschetta
3.) jar of basil pesto in olive oil
4.) jar of pine nuts
5.) yet another jar of piquillo peppers

I know… I’m out of control. But stay with me, because the pizza was awesome.

In addition to the DeLallo goodies, I also picked up:
1.) fresh baby spinach
2.) fresh button mushrooms
3.) an orange bell pepper
4.) a purple onion
5.) a small tub of ricotta cheese

Secret foodie confession: I keep frozen pizza dough in my freezer at all times. The type I buy is just a frozen dough ball in a bag from my local HEB grocery store. I keep both the whole wheat and traditional white on hand. And not just for pizza. If you thaw it out and let it rise, it can double as breadstick dough, cinnamon rolls, etc. Pretty versatile stuff, really.

So for this pizza, I thawed out a ball of the whole wheat and let it rise while I baked cookies. (More on that later, but it involves an on-line bake sale coming up later this month for which I am making cherry almond shortbread cookies dipped in chocolate. Break out your wallets, kids. You’re going to want to bid on these.) Here’s how the pizza baking went down.

First, I rolled out the whole wheat dough and baked it for 10 minutes, brushed only with olive oil, to prevent it from getting soggy, then I layered on a schmear of pesto, some sun-dried tomatoes (drained) and mushrooms sautéed in chili oil.

Next came a layer of fresh spinach, some sliced purple onion and the chopped & drained artichoke hearts. For the record, I L-O-V-E love artichoke hearts.

But wait! There’s more! Next, I got artsy with my orange bell pepper and roasted piquillo peppers. Yes, I play with my food. :) The Complete Package walked into the kitchen just as I finished laying on the peppers and said “this is going on the blog, isn’t it?” Psssh, what do you mean? All my food looks this good! Okay, whatever. Yes it’s for the blog, smartass. Still, it’s pretty!

And then, just when you’re thinking “Holy craptastic veggie goodness! What else could she possibly add?” I threw on some ricotta cheese seasoned with oregano, basil, garlic salt & red pepper flakes, some pine nuts I toasted in a skillet, and a drizzle of extra virgin olive oil. Looks good, doesn’t it?

I know what you’re thinking, and you’re right. That’s a whole lotta veggie. But we’re not done yet. You gotta pop that beast into the oven and bake at 425F for 25-30 minutes. I like to bake mine on a Silpat mat for an extra crispy crust. When the ricotta and pine nuts start getting brown around the edges, it’s done.

Yeah, baby… that’s the good stuff. Now you have to let it sit for 5-10 minutes to settle down a little. Then, cut that puppy up and dig in!

Boom. Done. Blow it up! For the record – it was delicious, we didn’t miss the meat, and it has completely solidified my deep and abiding love for all things DeLallo. Rabid. Brand. Loyalist. Because sometimes you just need a giant pile of homemade potato chips

Tired of reaching for stale potato chips from a greasy bag? Me, too. And it’s unnerving to read the list of preservatives on some of those bags. Am I right? Well, those days are over thanks to The Complete Package’s new toy – the OXO V-Blade Mandoline. This little guy is incredibly quick and efficient when it comes to slicing veggies. And it’s incredibly sharp.

Here’s how we sliced up a whole mess of fresh potato chips. It really could not have been any easier. To start, grab a few russet potatoes, scrub them, and peel most of the outer skin off. I like to leave a little of the potato skins for color, so I peel off every other 1/2″ or so. Give them a quick rinse and pat them dry.

Next, set up your mandoline and turn the dial to the thinnest setting. In this case, it’s 1/16th of an inch (1.5mm) for super thin & crispy chips.

Starting at the top of the mandoline, apply a little pressure to the potato and move it back & forth across the blade. It glides so easily, it almost seems as though it’s not working, but it is. When you get down to the last inch or two of spud, grab the tool included.

I’m not sure what it’s called, but I know what it does – it keeps you from slicing your fingertips off. Just spear the end of your potato, grab the tool by the ergonomic handle, and continue slicing your potato down to the very last slice. It’s so easy, and it completely eliminates any fear you may have of working with the super sharp blades. I love that. OXO really does think of everything.

When you’re done, you are left with a pile of perfectly sliced potatoes. In a million years, I could never accomplish this with a chef’s knife.

Sure, I can slice potatoes with a knife, but I can’t come anywhere close to this razor thin. I mean, c’mon. You can actually see through them. It’s amazing.

Once your potatoes are all sliced up, toss them into a colander and give them a thorough rinse under cold water to remove the excess starch. Spread them out onto a bed of paper towels and pat them dry.

Next, pour about 2″ of canola oil into a deep, heavy pan. Heat the oil to 350F. If you don’t have a clip-on thermometer for projects like this, I highly recommend it. I have one that can be used for frying, candy-making, you name it. And it is important to make sure the oil is hot enough. It’s what makes them crispy and keeps them from being greasy.

Once your oil hits 350F, use a slotted spoon to transfer the potatoes into the oil. This is my favorite frying tool. I found it in an antique shop years ago. If you ever run across one some day, grab it!

Fry, stirring occasionally, until they are a lovely golden brown.

When done, lift them from the oil and allow as much oil as possible to drain off, then move them onto a paper towel lined plate to drain thoroughly. While they are still warm, sprinkle them with your favorite salt. And that’s it – you’re done!

Now grab your favorite sandwich or a hot dog, or just grab a cold drink and eat them right off the plate. Either way, they’re much tastier than chips from a bag. Let’s dig in! You grab the napkins.

I love a good pimento cheese sammich

It’s hard to beat a good sandwich, isn’t it? Some people like tuna or egg salad. Some reach for a PB&J, a BLT or a grilled cheese. All are great, but let’s not forget the sometimes overlooked pimento cheese sammy. In my book, a really good homemade pimento cheese made with great cheddar and roasted piquillo peppers is hard to beat.

Let’s break one down. It starts with a great cheese. In this case, my favorite – Tillamook Cheddar. Medium or sharp, it needs to have great flavor.

Oh, Tillamook Cheese… how I adore you. If you have a food processor with a grater blade, grating the cheese happens in mere seconds. No fooling.

You only need 6 ounces to make two good-sized sandwiches. Which gives me an excuse to show off one of my favorite kitchen gadgets, my OXO food scale. This little guy is awesome. I’m using it with the digital reader in its ‘parked’ position, but if you’re trying to weigh something larger, it pulls out about 3″ so you can still see it even when using a larger container. Very cool. Just set your empty bowl or plate on the scale and hit ‘zero’ to clear the weight of the plate off, then add enough cheese to hit six ounces.

Next, grab jar of these gorgeous DeLallo grilled piquillo peppers. No cheap pimentos here, kids. Trust me – these piquillo peppers will rock your world. I love their rich roasted flavor and that they’re packed in water, not vinegar. They are robust and so much better than those small jars of brined pimentos. For this, five or six of these beauties will do nicely.

In a mixing bowl, combine the grated cheese, chopped peppers and 1/4 cup of mayonnaise (we’re a Hellman’s house). Toss in a pinch of kosher salt and 1/4 teaspoon of coarse ground black pepper. Stir until well blended, then cover it tightly and let it sit in the fridge for about 20-30 minutes.

After that, the only decision left is which bread to use, whether to toast it, and what to top it with. We like a good oat nut wheat bread. It’s so darned tasty. I love mine plain; he likes his with add-ons. A pickle on the side gets an A+ too.

The Mouse Project

You guys… I thought the 50th birthday shenanigans ended on Thursday when my blogging besties threw me a virtual birthday party, but no. They upped the ante with what has been known on Twitter as #TMPWatch2013. When it first popped up in my Twitter feed, I admit – I ignored it. I have goofy friends and there’s always some kind of ‘watch of the week’ going on. But when they started mentioning crafts, injuries, cat-tastrophes and swearing, it got my attention. Eventually, I wailed “I WANT IN!” Bet that got a laugh.

Kat stepped up and explained that it was a craft project. A “stitch & bitch” of sorts. She even produced a photo of an apron she was working on. There was embroidery of cilantro. (Yes, cilantro.) But she was a deceiver because that apron was distraction bait. They were scheming behind my back. My suspicions were confirmed when six boxes arrived, all with the same taunt written across the outside – “DO NOT OPEN UNTIL ALL PACKAGES ARRIVE”.

Three days I waited. There was a lot of tweeting back & forth. I kept saying “I can’t stand it!” and they kept saying “Don’t you dare touch them until they’re all there!” When the final box arrived last night, it was on like Donkey Kong. I did my best to live tweet as each box was opened, but I couldn’t help but wish they were all perched in my living room drinking margaritas with me.

Side Note: Now I know why my Felt Mouse Tutorial got so many hits last month.

So many wonderful things in Kirsten’s box. The mice are hilarious. Old MouseDonald comes with a pig that oinks (and the eyes light up). The Ranger Mouse was a joint project with her oldest son. He sent a book to go along with it. There’s Laverne & Squirrely, a travel mouse, a pie baker, Jeanne Cash (dressed in black & an inside joke with TCP), and an adorable garden gnome mouse complete with shears. Bonus swag: Danish chocolate & girly bling. Hey, Kirsten… I think this birthday brought both Freaked Out and peeing my pants a little.

Allison’s mice are a perfect blend of sweet, touching and hilarious. Examples:
Duchess Emouska – who look a little like Cruella DeVille; she rocks zebra print
Mousy Gras – raise your hand if you know how she got all those beads
Dr. Pellet – the mousetroenterologist reminding us to help prevent colon cancer
Havarti Marti – she’s here for the party; we’re gonna get along fine

Allison always keeps me in stitches. Even her card made me laugh out loud.

I don’t know who to feel sorrier for – Carrie or her Vlad the Impaler mouse. She had the week from hell and yet still made time to make these mice. There’s a lady mouse in pearls, a gentleman mouse in a bowtie, Little Willie who sings Texas classics on his guitar, and the mouse that was obviously the last straw. Yes – those are real sewing needles protruding from his body, and yes – she shipped it that way. I’d love to know what her post office thought. Not just for the voodoo-like use of needles, but for the toddler meltdown that went with shipping it. Despite it all, her mice are testimony to her perseverance. Thank you for hanging in there, Carrie. I am completely charmed.

Sweet Megan. She writes the blog Country Cleaver. In her blog archives, you’ll find the story about how she chose the name for her blog. It involved a photo shoot in which she did her best June Cleaver impersonation. She channeled her Country Cleaver persona into this sweet little mouse, complete with a stylish apron and pearls. I’m guessing she loves Nutella and salmon, although not at the same time. I’m also pretty sure she’s addicted to Downton Abbey and all things Royal. Her dream man can wield an ax and wear flannel like a boss. She’s lovely and has her act together, just like Megan.

Meet Leilani. She is the Spirit of Aloha, and she traveled the furthest to be here. She is sporting the latest in swimwear from the great state of Hawaii and bears the traditional greeting of a lei. This cutie is the creation of Monica, the Grommom, who shares her life homeschooling four adorable surfer dudes (groms) without seeming to rub our noses in the fact that she lives in paradise. Her tropical flair brings sunshine into our lives and her iPhone shots of sunsets and beaches inspire us. Monica is a doll, and so is her sweet mouse.

Beka of Kvetchin’ Kitchen is many things – smart, funny, strong – but I had no idea she was a crafter. She is responsible for most uses of the hashtag #AllTheSwears on Twitter while #TMP2013 was being chatted about. Girlfriend has hidden talents, and felt mice is one of them. Who knew? Beka made five mice, but one got ripped to shreds by her cats. Such a shame. We could have created a killer Walking Dead diorama for him. But let’s celebrate the survivors – a mustached gentleman with an engagement ring at the ready, a sweetie holding a pink rose who I suspect is about to say “Yes!”, a Mouscasso portrait (very creative) and The Birthday Queen, complete with royal crown & scepter.

I think it takes a fellow Texan to understand why a tie-dyed “Keep Austin Weird” mouse named Leslie would make me furiously happy, and Katie from The Hill Country Cook is just that Texan. Her mice are so reflective of her personality – fun & fabulous. There is a polka dot “Surprise!” mouse, a little sweetie hugging a birthday candle, and a trademarked Peace, Love & Baking mouse. Those symbols on the bottom of the blue mouse are a peace sign, a heart and a whisk. Peace, Love & Baking is how Katie ends each blog post, so it’s only fitting that one of her mice bears her emblem. Also stashed in Katie’s box – a mylar birthday banner & a party horn. Party on, Katie!

I think it’s safe to say that Madeline surprised us all. We had no idea she was a closet crafter. Check out her mice. There is a sweet gray mouse in an apron with buttons, a daring hot pink lady bringing the bling, a sweetheart of a purple mouse embellished with red heart buttons (five hearts representing the fact that we both come from families with five girls), and the most adorable little aviator mouse complete with flight wings and a tiny toy airplane. Wow. Just wow.

Of course Kat, our resident fashionista, would go full-on glamorpuss. She created not one but SIX fearless females she calls the “Cougar Cocktail Conga Mice”. Here it is in Kat’s own words: “They’re all named Tammy. Naturally, they’ll paint your nails, tease your hair and cover you in rhinestones. It’s just how they operate.” Only Kat would send All The Tammys. It’s like ZsaZsa Gabor had a box of mice babies, and they are priceless! All is forgiven for the great Cilantro Apron Deception, Kat. All is forgiven. PS – they came with hooch!

Next up was Mads’ two mouse besties – Mildred & Sophie. They’re the Thelma & Louise of mice. Mildred just turned 50, and just like me she likes to stir up mischief and enjoys a good Bloody Mary. Her BFF Sophie is more inclined to pink fruity cocktails and riding in convertibles. Together, they are unstoppable and despite a few incidents involving glue they still look marvelous. Must be all that sunshine and beautiful weather on the California coast. Real Mousewives?

Anne of From My Sweet Heart blog is known for her beautiful desserts. Each of her sweet creations is a masterpiece and each will have you licking your computer screen. It should be no surprise then that she would channel that same artistic ability into felt mice, but we were still surprised. Just look at her beautiful works of art – there is a sweet berry-laden Flour Power mouse, a pie maker wielding a spatula, a cookie baker complete with cookie jar and slotted spatula, a rolling pin baker who loves her job, a sweet pink donut mouse (a girl after my own heart), a hot pink party mouse, and a sweet cotton candy confection that is as sweet as her treat. So much love. So much fun. So much anticipation followed by so much squeeing. And so many back stories – both for the mice and for all the secrecy, the glue gun & sewing needle injuries, and the swearing. Apparently there was a LOT of swearing. Beka’s two cats even brought violence and drama to the mix. RIP Unknown Soldier. You will not be forgotten.

To all the ladies who helped make my 50th birthday one for the record books, thank you a MILLION times over. Words can’t express not only how much I feel loved, but how much I love each of them in return. Some day we’ll all get together, and when we do it will look like one of those rugby tussles where all the sweaty men tackle each other and roll around on the ground. Except that we’ll be laughing instead of sweating. Everyone knows women don’t sweat – they mist.

PS – Special thanks to Kirsten, whom I suspect was the ringleader in all of this, but who is too modest to take the credit. Blame. No, credit. It was ALL amazing. I never saw any of this coming, so either she is a Super Sneak, or I am a mullet. Please refrain from voting out loud. Thank you.

PPS – I have no idea how I’m going to display all these mice, but rest assured that they will not be hidden away and forgotten. If I have to ask The Complete Package build a wall of shelves in my sewing room, so be it. (Right, honey? Right pookie bear? Right snoogie oogums? Right sugar booger? Honey? Hello?)

It’s just a number anyway, right?

50th birthday

Wow… that’s a big number. Half-a-hundred. Half a century! Remember when you were just a kid and someone said they were 50 and you thought “Wow, she’s older than dirt!” – well, I’m officially there.

Today could have sucked the wind out of my sails or the jelly out of my donut but it didn’t. Some people may turn 50 and FREAK OUT, but not me. Age is just a number and while my knees often feel 50, in my mind I am still 36. If that’s me taking the denial train, then I’m all aboard. In fact, I kind of like my seat.

The Complete Package (my beloved husband) left this morning for a business conference and while his timing brought him a lot of guilt, I was prepared to spend the day alone shopping for new bras and treating myself to a lemon berry slush at Sonic. That might sound sad to some, but we haven’t really put a lot into celebrating birthdays around here since our daughter grew up and moved out on her own and I started seeing more gray hairs than brown in the mirror.

That is, until this morning when I received a text from my friend Kirsten at Comfortably Domestic while browsing the bra selection at Kohl’s. (That’s right, ladies… if you’re in the market for over-the-shoulder-boulder-holders, they’re on sale this weekend at Kohl’s. You’re welcome.)

Not to put too fine a point on it, but while I was shopping, Kirsten sent a text message that went something like this:

Her: Where are you?!? Why aren’t you on your computer like you’re supposed to be?!? How could you be so selfish?!? (Okay… that’s slightly embellished.)

So I responded with: “Yo! Why you all up in my biz-ness? I’m shopping for B-rahs!” (Not really, but I’m trying to illustrate a point so roll with it.)

So then she was all like: “Seriously. You need to get home and get online.”

And I was thinking: “Sweet! They must have picked a new pope!” (But I’m not catholic, and that was not it.)

As it turns out, my friends from Salad Week & Beer Week & Crepe Week & Sweets Week had pulled out all the stops and thrown me a virtual Happy 50th Birthday party. They were all watching their Twitter feeds for my reaction, and I was at Kohl’s picking out bras to take home and try on (because no one ever wants to try on bras in a public fitting room – am I right, ladies?)

Here’s what greeted me when I opened Kirsten’s blog:

As I read her recipe for Orange Creamsicle Pie, I began to grasp the scope of it all. There was the list of my blogging besties with all of the glorious things they created for my big day. Shit, y’all. Cue the waterworks and pass me the tissues. So. Much. Love. You know today had to be the day I failed to wear the waterproof mascara, right?

So I’ve been sitting at my computer for hours now, and I’m blown away by the thoughtfulness of others and the karma of timing and the gratitude that comes from having such amazing friends. Anyone who scoffs at bloggers for having imaginary internet friends will never get it. But I do, and I am forever grateful to these wonderful ladies whom I adore:

Lauren at Climbing Grier Mountain – who put the fun back in mini pies with Key Lime Pies in Animal Cracker Crusts

And Beka at Kvetchin’ Kitchen – who brought the funny & the hooch with her Aged Manhattan Cocktail because nothing says “Let’s celebrate the old broad” like aged whiskey (love it!)

There are not enough words in the English language to convey how much these ladies mean to me. They made turning 50 unexpectedly fun. OKMH – It’s baaaack!

One Kitchen Many Hearts – it’s a box exchange program we started last year among a small group of blogging friends. Every other month, we send a box of local, handmade and/or favorite goodies to another blogger on a rotating basis. By the end of the year, each of us has received a box of love from everyone on the list. Last year was so much fun we hated to see it end, so it won’t! With absolutely no arm twisting, we’ve decided to continue for another year.

Allison knows me well. If there’s two things I love in life, it’s squirrels and corn. I joke with The Complete Package that some day we’ll retire to a squirrel ranch where we’ll sit on the porch each night, sipping whiskey and watching the ‘herd’ come in over the hills for the evening. Because I’m weird like that.

She had me at kilt. After a few of these, you can bet I’ll want to know what’s under the kilt. I’m hanging on to it for a little while so I can pair it with a big fat toasty rueben or pastrami sandwich. Or maybe a batch of Beer Bread.

It’s syrup made from the fruit of the prickly pear cactus. It’s sweet & tart and fabulous. Yes it would be great on pancakes or drizzled over ice cream, but my mind went straight to margaritas. Have you ever had a cocktail you can’t stop thinking about? Well, one of mine was a big frozen margarita swirled with this lovely elixir. It was probably 8 years ago at a business dinner in downtown Houston, and I still think of it fondly. For me, this stuff is liquid gold.

Remember Sweets Week? I made my retro Raspberry Divinity. Allison made Lemon Marshmallows. I’m thinking we should schedule all future theme week endeavors so that they publish just before our OKMH boxes are shipped, because I got a bag of these beauties:

Big soft fluffy lemon marshmallows. It goes without saying these are NOT the dry spongy flavorless version you find at grocery stores. These are the perfect texture with a burst of lemon zest that makes your tongue tingle, and they are lovely. One died instantly; the rest are being rationed for maximum pleasure.

Our theme this month was “Winter Essentials” and Allison outdid herself by crafting a handmade scarf in my favorite colors – blue & green.

It’s so delicate and light as a feather. I cannot imagine the number of hours spent creating it. What a treasure! We don’t really experience winter down here, but this lightweight beauty is perfect for those occasional chilly evenings. Thank you hardly seems adequate when someone puts this much time & love into a project, but THANK YOU, ALLISON!

Did you notice that snowflake in the background? All of the gift tags were made from hand-crafted paper snowflakes – the closest thing to snow we ever get on the southern coast. Not that I’m complaining (okay, I’m complaining).

I’ve saved the best surprise for last. This one really knocked my socks off because it was so unexpected. Remember the felt mouse tutorial I posted last month? Well, look who just got an A on her homework:

Oh my goodness! Isn’t she adorable? Here’s what Allison had to say about her.

“Her name is Mousidora, from the Greek that means “from the Muses.” She’s so named because I felt inspired to make her. Obviously she is a coffee drinker, and while she’ll take a splash of cream, she prefers it strong and black. That being said, she won’t say no to a wee nip of cheddar schnapps, if you know what I mean. Keeps the chill off. Her scarf is functional, but of course it’s a good look for her as well. Mousidora takes great pains to look good, even when it’s cold outside. She knows that the cranberry sets off the sparkle in her eyes. Mousidora’s hobbies include antiquing, lunching with her lady-mice friends, and betting on the ponies. She’s as sharp as a tack and likes a good nosh.”

Words cannot describe how fun it was to find this little sweetie. She and her tiny ‘cup-a-joe’ are forever perched on my kitchen coffee station so we can enjoy our morning brew together (like the bag of Sumatran coffee beans Allison included – yum). We’ll just be sipping our coffee under the Eiffel Tower, sharing our plans for the day and expressing our gratitude for great friends like Allison.

OKMH: The Secret Santa Project

As 2012 draws to a close (that seems so unreal) so does our first year of One Kitchen Many Hearts boxes. This little ‘boxes of love’ project has been one of the greatest joys of the year for me. Not necessarily for what I received, but for how much fun I had hand-picking items to send to each beloved friend. I anxiously waited, every other month, to see how those gifts would be received. And when a box of love was a success, it made the whole world seem brighter.

For December, our final exchange of 2012, we decided to draw names Secret Santa style and surprise each other. No teasers. No hints. No “wait until you see what I’m sending you” tweets. Until that box showed up on each porch, there would be no clue as to who was sending to whom. My Secret Santa was Kirsten (my twin separated at birth) from Comfortably Domestic in Michigan. And true to her ‘kindred spirit’ form, she totally nailed it.

Perfect theme. Perfect choices. And SO…. MUCH…. LOOT!

Yup. She gets me. She knows that I pine (whine) over her glorious abundance of snow while we languish in shorts and sip iced drinks well into January. I covet her snow. So she sent me a Winter Wonderland in a box, and it was perfect. Perfect timing, perfect selections… just perfect in every way.

My first squeal came when I discovered the tub of Mayan Hot Cocoa Mix. She posted this recipe on her blog and I swooned, but then she sent me some! AND she even sent a fabulous snowflake mug and a tub of miniature freeze-dried marshmallows. How fun is that? They’re so tiny & cute!

So of course I immediately made a cup so I could enjoy it while I unpacked the rest of the box. Evidently, I am all about instant gratification when it comes to hot cocoa. Kirsten’s is even more decadent because it has a hint of cayenne pepper in it. Not enough so that you taste it, but just enough that you feel a slight burn in the back of your throat. I love that sweet little burn.

SO. GOOD. If that wasn’t enough, she included these cute ‘cup’ cookie cutters.

I haven’t made cookies with them yet, but I’m going to. Soon. Until I get around to it, here’s a suggestion of how they would work. Just imagine it’s a chocolate almond shortbread cookie. Or a cranberry orange sugar cookie.

It’s a virtual baking blizzard up in here! That snowflake spatula is sturdy, man! Even the stiffest cookie or bread doughs will be conquered with that beast. I love it! And a girl can never, ever have too many cupcake wrappers. There’s just no such thing as ‘enough’ cupcake wrappers.

This snowflake cookie cutter is sturdy, too. This ain’t no flimsy aluminum cookie cutter, my friends. This cutter says ‘I could do this all day.’ It laughs at flimsy cookie cutters. At nearly 4″ across, if this made actual snowflakes, they could kill on impact. Can you just imagine giant buttery snowflakes falling from the sky? I can, and I’m catching them in my mug of hot cocoa.

One cookie, and you’d be stuffed to the gills. I would pretend to be a dainty eater. You’d be all like, “Can I offer you another holiday treat?” And I’d be all like, “No thanks; I just ate a snowflake. I couldn’t eat another bite!”

But I saved the best baking surprise for last. It’s this little unassuming bottle:

It’s unicorn tears. I’m just kidding. It’s actually fiori di sicilia and it’s a baker’s secret weapon. A blend of citrus & vanilla, it brightens everything from ice cream to cookies to bread dough. I cannot WAIT to crack that puppy open! I just have to find the perfect recipe. Something truly worthy. Suggestions?

Also included in the box – two sweet winter-themed hand towels (who doesn’t love a penguin, seriously) and a snowflake ornament. Ah-door-ah-bull.

But wait, there’s more! No OKMH box is complete without something girlie and Kirsten went for mani/pedi fun. As a south coaster, Kirsten knows I’m a slave to humidity. When winter comes and the heaters click on, I begin to shrivel like a lizard. There’s nothing pretty about it, either. So for my dry lizard skin, there is Carmex healing cream. As soon as I put it on, my skin said, “Ahhhhhhhhh.” And there was polish! I love these two sparkly, frosty colors together. So pretty!

And for those days when sweet & frosty won’t cut it, she included this wild OPI set as a tribute to my Day of the Dead Mask post from October. So much fun, and they even came with little DOTD stickers for your nails, too!

These are going in my Tub-O-Polish for girlie nail painting parties like Hoegarden. Or when I want to spice up my toes (even though no one will see them this winter). It’s like wearing racy underwear under a boring business suit. Hypothetically speaking, of course. {giggling}

Always a mom at heart, she included these reuseable snack bags for the grandkids – Jonah Bear & Lilly Bug. They’re going to love them. I’ve already stuffed them with snacks and juice boxes. No kidding.

I love that these are washable, and the kids are going to love the cute prints. Lilly Bug is all girl with a pink fetish and Jonah Bear is all about the super heroes. Thanks for thinking of them, Kirsten. So thoughtful.

But I saved my very favorite surprise for last.

Did I mention Kirsten is a knitter? I wish I knew how to knit. We made a deal recently. She’ll teach me to knit if I’ll teach her to sew. We just need a few weeks together. That’s all. Or maybe a month. A month would be much better.

Lucky for me, Kirsten is a gifted knitter and she made something special just for me in the most beautiful shade of blue. Seriously, I died.

Fingerless Victorian-inspired gloves. Fingerless because she knows it never gets cold enough down here to wear a heavy coat. Victorian because we share a love of antiques. Some day we will wear gloves and sip chai tea together as we browse antique shops. It’s a dream of ours, and one I’m determined WILL come true. Some day. Not just ruffles, but ruffles with contrasting trim in black. And those buttons. They kill me. I don’t know how she did it. Well, actually there’s a story behind the gloves. If you look at the photo of the inside of the card again, you’ll see that little note on the top left corner about a funny story. It turns out that Kirsten crafted these gloves while they were traveling by car for Thanksgiving. She was so excited to get them done on the drive, she showed them to her husband, who commented “Did you mean to knit two left-handed gloves?” To her surprise, she’d accidentally made two lefts. She had to rip one apart and re-knit it into a right handed glove. She calls that a funny story. I would have cried.

Those gloves are a symbol of how nothing gets in the way of our devotion to make each box as perfect as possible. I can’t speak for all the ladies, but I believe the preparation and care and love that goes into crafting each OKMH box is the best part of this project. Well, that and hearing how much each box meant to those who received them. And although 2012 is almost behind us, I have a feeling One Kitchen Many Hearts will continue for years to come.

I’m sending a big bear hug to Kirsten, along with a very special thanks for my Winter Wonderland extravaganza. I could not imagine a better holiday surprise. Cookie Week: Turtle Thumbprints

It’s Cookie Week! That’s great news if you’re a cookie lover; even better news if you’re a supporter of Cookies for Kids Cancer. This year, my blogging friends and I will again be baking to support this very worthy cause. For each cookie baked, sold, exchanged, or gifted Glad will donate $1 (up to $100,000). In addition, OXO (one of my favorite brands) has initiated the “OXO Matching Gift Program” and will match all proceeds from registered bake sales as part of their $100,000 pledge to Cookies for Kids Cancer. I’ve loved these brands for years, but I love them even more for their unwavering commitment to ending pediatric cancer. I’m sending a big thank you and hug to OXO & Glad.

And now on to the cookies! I chose Turtle Thumbprint Cookies this year. Risky, since I’ve never made them before, but when I saw them on Pinterest, I couldn’t resist. It’s one of my favorite flavor combinations – chocolate, caramel & toasted nuts. I love turtles – whether in cookie, brownie or ninja form. These are no exception. It all starts with a rich, truffle-like dark chocolate dough.

Dark Chocolate Thumbprint Cookies:
(adapted from The Kitchen is my Playground, and America’s Test Kitchen)

1 cup all-purpose flour
1/3 cup Hershey’s ‘Special Dark’ cocoa powder
1/4 teaspoon salt
1 stick of unsalted Land O’ Lakes butter, softened
2/3 cup sugar
1 large egg, separated + 1 extra egg white
2 tablespoons milk
1 teaspoon pure vanilla extract

1 1/4 cups toasted pecans, finely chopped
1 jar of dulce de leche caramel, for filling
6 ounces of chocolate chips, for drizzling

For the cookie dough:
Combine the flour, cocoa & salt; set aside. Using an electric mixer, cream the butter and sugar until fluffy. Add the egg yolk, milk & vanilla; mix until thoroughly incorporated. Reduce the mixer speed to low and blend in the flour/cocoa mixture. Cover with plastic wrap and refrigerate until firm (at least one hour). Once firm, scoop 1 tablespoon of dough into the palm of your hand and roll into a ball. Continue until all the dough has been rolled into balls.

To assemble the thumbprint cookies:
Whisk both egg whites until frothy. Place the chopped pecans in a separate bowl and keep nearby. Using a fork, lower each cookie ball into the egg whites, rolling to make sure they’re completely coated.

Remove from the egg wash and immediately drop it into the bowl of nuts. Roll or toss until the dough ball is completely coated in nuts.

That last photo reminds me of “Where’s Waldo?” Can your find the cookie? Here’s an example of a perfectly coated cookie ball:

Place the cookies 2″ apart onto cookie sheets (I recommend using a silicone mat or parchment). Using your finger or a round wooden spoon handle, press a divot into the top of each cookie. The bigger the divot, the more caramel it holds.

Bake at 350F for 12-14 minutes, depending on your oven. You want them to just be done. Bake too long, and they’ll start to split and crack around the outside edges which will wreak havoc when you try to fill them with caramel. And we don’t want that. When they’re cooled to room temperature, grab your favorite dulce de leche caramel. I’m using this jar of unholy goodness sent to me by my friend Kat at Tenaciously Yours. It’s sea salt caramel from Trader Joe’s and it’s divine. Ima need a new jar soon. Or two. Or twelve.

Spoon just enough caramel into each cookie to fill the divot without running over the top. They get really messy when they run over the top.

Now grab your favorite milk chocolate and melt it; whisking until smooth. I like to scrape it into a plastic zip-style Glad bag so I can drizzle quickly and easily (plus it makes clean-up a snap). Just twist the baggie to press the chocolate into one corner, then snip the tip and drizzle like a pro. If you want to get all fancy-pants, you can top these with a toasted pecan. I tried it, but I’m not sure I like having my view of that sea salt caramel blocked. Caramel is meant to be seen.

Notes from my personal experience with this recipe:
1. The dough balls (uncoated) can be made and frozen in advance in airtight freezer bags. Just thaw before coating with egg wash & nuts and baking.

2. The recipe called for regular cocoa, but I’m a dark chocolate lover so I substituted the Hershey’s Special Dark cocoa and it rocked.

2. Almonds can be substituted for pecans. And if you’re a Snickers fan, I’m betting peanuts would be pretty tasty, too.

3. The original recipe (as seen on Pinterest) called for using 14 wrapped soft caramel candies, melted down with 3 tablespoons of heavy cream. I chose the jar of sea salt caramel because I had it on hand and it’s delicious.

4. This recipe says it makes approximately 30 cookies. I tripled the recipe for a holiday cookie exchange and it worked perfectly. It made exactly 90 cookies. You’ve got to love truth in advertising.

Speaking of truth in advertising, are you familiar with the OXO brand? One Kitchen Many Hearts – October

Oh sweet glorious gift exchanges, it’s that time again. The time when our little circle of blogging buddies send care packages to each other; just because.

And while we know who’s sending each box, we never quite know what to expect. For that reason, each exchange is like a little bit of Christmas all year round. This month my box came from Kat of Tenaciously Yours in the Minneapolis/St. Paul area of Minnesota. Check out all the fabulousness, including every non-perishable thing needed to make Cafe Latte’s Famous Turtle Cake. See that cute tea towel? If I’m not mistaken, Kat’s sweet mother has been hand-stitching these one-of-a-kind towels for all of Kat’s OKMH boxes this year. How sweet is that? Mine has purple plums framed in a cheerful yellow border. Absolutely lovely. And get a load of that silver server. I have an old dainty one that I have to use with caution. This one is fancy AND sturdy. I’m talking ‘lift a turkey from the roaster’ sturdy. I think that cut-out at the end may even double as a beer bottle opener. How’s that for an all-purpose kitchen tool?

This next treasure really made my heart melt. I don’t even remember how it first came up, but Kat showed off this vintage 1940’s cookbook a few weeks ago and I immediately swooned. I have a deep abiding love for vintage cookbooks, as well as a long-standing love affair the JR Watkins brand. This book was like a long-lost star-crossed love at first sight thing for me. When I opened my box, I was stunned to find the book with its purple post-it note. Heart be still.

It’s a salad cookbook; copyright 1946. In case you’re wondering, yes there are ingredients listed that I don’t believe exist any more & yes, there’s a lot of mayonnaise throughout the book. But I’m not afraid of a little mayonnaise, and you should know by now that I always play around with recipes. So hello, 1946. Let me introduce you to a little thing called fat-free Greek yogurt. Booyah!

Another unexpected surprise: while flipping through the cookbook, this gem fell out. It’s a recipe from a magazine or newspaper circa the 1950’s, and it’s for Halloween Doughnuts. Just before Halloween, y’all! Talk about timing!

This bonus recipe was tucked inside. Perfect timing!

I’ll have to try those soon, but for now let’s get to the real meat of this OKMH Box – that Turtle Cake. Raise your hand if you want to help me eat this:

What? Still not sure? What if I show it to you like this? All sliced up and ready to face-plant into? Does that help? Did I mention it’s all soft and gorgeous on the bottom, and all fudgy and caramel-coated on top? Now are you interested?

Yes, it is as rich and gooey as it looks.

Okay, I’ll put on a pot of coffee and wait for you. Who am I kidding?! This cake is GONE! G-O-N-E gone. Don’t despair, my lovelies. Kat included the link to the recipe on her blog and I’ll share it here, too. Just click here for the recipe. Note: the recipe calls for this to be baked in three 9″ round pans. I baked it in a 13″x9″ pan (baking time changes to 35 minutes, in case you’re taking notes).

Next month, in celebration of the holidays, we’re rocking OKMH “Secret Santa” style. Boxes will arrive in December with no advance notice of who will be shipping it. When I say “I can’t wait!” I mean it; I’ve already been crafting cute holiday things for my secret recipient.
