I don’t know how this happened.

Remember my post from 2 weeks ago? The one with the pineapple update? The update where I said we probably had at least 4-6 weeks until harvest? Well, we went to Austin last weekend to visit the kids and came home to this:

I don’t know how this happened. They went from firm, mostly green and this:

to completely, thoroughly golden-yellow ripe in 4 days. FOUR DAYS!

I can only attribute it to:
A.) four days of intense Houston heat, followed by
B.) a good solid day of rain during drought conditions, and
C.) my lack of experience growing pineapples (even with 15+ plants)

We had no choice but to harvest them before they got too ripe, which was disappointing because we really had hoped the kids would be here to participate. Instead, The Complete Package & I cut them down. No kids; no celebration.

Here’s a peek behind the curtain at how we’ve accumulated so many pineapple plants over the past few years. Each plant, while it’s fruiting, puts off several shoots (ratoons) that can be removed and replanted to form new plants. Each of our four fruiting plants put off at least 2 to 3 ratoons.

I’m no math whiz, but if each pineapple plant produces 3 ratoons PLUS a pineapple fruit, that means you now potentially have FOUR (4) additional future pineapple plants, because you can replant the ratoons and replant the top off the pineapple fruit. We started six years ago with the top of a pineapple plant we’d bought at the grocery store. We now have over 15 plants because we keep re-potting the ratoons & pineapple tops. I joke about our mini-plantation, but it’s actually kind of true. They’re taking over our back porch. Two years ago, we harvested one lonely but gorgeous pineapple. This year, we got this:

Which brings me to our new little gadget I just have to show off. My friend Kirsten of Comfortably Domestic (my sister from another mister) and her four boys were so excited about our pending pineapple harvest, they sent us the new OXO ratcheting pineapple corer & slicer. Oh, baby!

To use it, lop the top off your pineapple, leaving about 3/4″ so you can replant it later and become a semi-obsessed mini-plantation pineapple farmer like me.

We set the pineapples into a mixing bowl to capture any juice so I could make marmalade (always thinking ahead), then TCP set about coring those golden puppies. The OXO pineapple corer tore right through each pineapple in seconds.
It was amazing to watch and surprisingly fun to use.

Did I mention it ratchets? You don’t have to turn the bowl or move the pineapple or anything! Just twist the handle on top and it ratchets after each cut until it reaches the bottom. Once done, you simply pull the rings right out of the shell. That’s right – I said rings!

We set aside one tub of rings for Jonah Bear & Lilly Bug, since they both said they’d like to recreate our pineapple upside-down cake from the 2011 harvest, and poured most of the pineapple and juice into the Dutch oven to make my first ever batch of pineapple upside-down marmalade (pineapple, brown sugar & maraschino cherries). With that, there was only one last task to conquer.

Remember that post I mentioned in the first paragraph? The one where I said we probably had a few weeks until harvest? Well, I may have mentioned in that post that I’d also like to make fruity cocktails with this batch of pineapples. And since the OXO corer/slicer did such a nice job of creating the perfect vessel, there was just one last thing to do.

OKMH – The Summer Picnic Edition

Nothing beats a OKMH mail day. This month, our One Kitchen Many Hearts gang chose ‘Summer Picnics’ for our gifting theme. My box came from Kirsten of Comfortably Domestic from the northern regions of the great state of Michigan. Home of The Cherries (my favorite fruit). Did I mention she brought me a 4 pound bag of dried Michigan cherries when she came to visit in May? Because if there’s one sure way to get me to invite you down for a long weekend of antiquing, Texas Martinis and traditional southern cuisine, it’s to pack a huge bag of cherries in your carry-on (for future reference).

OKMH June 2013 - Box O' Goodies

For the record, this might just be my favorite theme to date. There’s so much going on in this box. Let’s just break it down into manageable bits, shall we? First, each parcel was lovingly wrapped in cute polka dot tissue and tied with a ribbon and a ‘cherry lug marker’ as a gift tag.

You’re probably thinking “What the heck is a cherry lug?” Welcome to the club. I didn’t know about them, either. Here’s what Kirsten said in her card about them: “The tags are vintage cherry lug markers from Morgan Farms – now the spot of an exciting new subdivision. I thought you’d get a kick out of having a few pieces of (Michigan) history.” She’s right. I love them. Not sure what I’ll do with them just yet, but stringing them onto a charm bracelet has crossed my mind. What would you do with them?

Kirsten knows me well. A perfect example is this Dagoba chocolate bar. While friends send friends chocolate, true friends know what you love and send the good stuff. The dark stuff. As a bonus, this one had organic mint & rosemary essence. It was all that and a bag of chips, as we used to say back in 1993.

In case the chocolate didn’t soothe all things, she also threw in a jar of Ancient Healer Herbal Salve. Oh, baby… you should smell this magical potion!

It smells of all the great herby things – rosemary, evergreen trees, and earth. I love a good herbal salve. It’s my ‘go to’ ointment for burns, rashes or scrapes but is also perfect to soothe those summer sunburns. It’s lovely and perfect and made in Michigan. Know what else is soothing and made in Michigan? Wine!

This beauty came in a separate box, shipped directly from the Brys Estate in Michigan (seeing a theme here?). It’s one of my all-time favorite whites – a . Ever tried one? If you enjoy a nice chilled white wine for summer, you need to try one. But you’ll have to get your own – this Brys Gewürztraminer in mine. All mine! (You can’t hear it, but I’m doing my evil laugh while hugging the bottle.) Kirsten also included two ‘travel size’ bottles of Jose Cuervo margaritas – the perfectly portable picnic potion.

This cute post-it pad sums up how I feel about my morning coffee. As I said, girlfriend knows me well. She’s my sister from another mister. My pal from another gal. My… okay, I think you get what I’m saying. She gets me.

She also has the memory of an elephant. I wish I had her brain cells for even a day. Menopause has officially robbed me of most of mine, but Kirsten remembers all the good stuff. Like this vintage find from an antique shop. We saw one while antiquing when she was down in May. Next thing you know, there’s one in my June box. Do you know what it is?

Ultimate meat fork? No. Beard comb? No, and I’ll thank you not to mention my beard. :) It’s a cake comb! It’s used to slice delicate cakes like angel food or chiffon cakes. Even more effective than today’s serrated knives, these cake combs are the unicorns of baking utensils. This one will be perfect for my Berry Week contribution next month, so stay tuned. It will be making a return appearance in a few short weeks. (Thanks, K! Perfect timing!)

And a picnic isn’t a picnic unless it’s portable. Kirsten had that covered, as well. Check out these beauties! The first is a thermal insulated chill bag in a cute owl print. Who has two thumbs and loves owls? This girl! You pop the bag in the fridge or freezer to pre-chill, then pack and go. The second is a stainless steel thermal beverage bottle. In my favorite color, no less. It goes without saying that I love them both and will put them to good use this summer.

Leftover Easter candy for the win! I love coconut & chocolate, so Mads was definitely on a roll here. And the dark chocolate chili by Lindt is a favorite. Our friends Kaki & Donny introduced us to it with the recommendation that it pairs beautifully with red wine… which we just happen to have in the pantry. How convenient! It’s like she was reading my mind. Sometimes you feel like a nut.

Y’all, it’s a flower spatula! As a lover of all things Kitchen Gadgety, this was awesome. It’s long enough to flip things on the grill. I can’t wait to make The Complete Package use it for burgers! We’ll have to see if he can channel his inner diva enough to take it outside where other male neighbors might see him. If not, it’s also perfect for pancakes and cookies. So springy!

Next up, Mitts & Paws – because nothing says “I’m ready to take off my flannel PJ’s and get outside” like a mani/pedi. I love this vibrant hot pink. And it came with foam spacers (for accident free piggies) and a sparkly glitter nail file. How spectacularly girly, Mads!

After a few months of running the heater in Houston, my skin is crying “yessss!” Madelyn says she hoards this body butter and now I know why. Haven’t tried it yet? You need to. Your hands will thank you. Your shins will thank you. Your crusty elbows will thank you. Your significant other will thank you.

Lastly, Mads included something that said in the most gentle of ways “You’ve scarred me for life.” It made me laugh out loud (the items, not the scarring).

It’s a bag of leftover craft supplies from The Mouse Project when my OKMH buddies crafted 50 felt mice to celebrate my 50th birthday. It was a hoot for me because it was based on my felt mouse tutorial, but mildly traumatic for those who, in their own words, were not born to craft. Cookie Week: Turtle Thumbprints

Cookie Week '12 - Turtle Thumprints - Drizzled
It’s Cookie Week! That’s great news if you’re a cookie lover; even better news if you’re a supporter of Cookies for Kids Cancer. This year, my blogging friends and I will again be baking to support this very worthy cause. For each cookie baked, sold, exchanged, or gifted Glad will donate $1 (up to $100,000). In addition, OXO (one of my favorite brands) has initiated the “OXO Matching Gift Program” and will match all proceeds from registered bake sales as part of their $100,000 pledge to Cookies for Kids Cancer. I’ve loved these brands for years, but I love them even more for their unwavering commitment to ending pediatric cancer. I’m sending a big thank you and hug to OXO & Glad.

And now on to the cookies! I chose Turtle Thumbprint Cookies this year. Risky, since I’ve never made them before, but when I saw them on Pinterest, I couldn’t resist. It’s one of my favorite flavor combinations – chocolate, caramel & toasted nuts. I love turtles – whether in cookie, brownie or ninja form. These are no exception. It all starts with a rich, truffle-like dark chocolate dough.

Dark Chocolate Thumbprint Cookies:
(adapted from The Kitchen is my Playground, and America’s Test Kitchen)

1 cup all-purpose flour
1/3 cup Hershey’s ‘Special Dark’ cocoa powder
1/4 teaspoon salt
1 stick of unsalted Land O’ Lakes butter, softened
2/3 cup sugar
1 large egg, separated + 1 extra egg white
2 tablespoons milk
1 teaspoon pure vanilla extract

1 1/4 cups toasted pecans, finely chopped
1 jar of dulce de leche caramel, for filling
6 ounces of chocolate chips, for drizzling

For the cookie dough:
Combine the flour, cocoa & salt; set aside. Using an electric mixer, cream the butter and sugar until fluffy. Add the egg yolk, milk & vanilla; mix until thoroughly incorporated. Reduce the mixer speed to low and blend in the flour/cocoa mixture. Cover with plastic wrap and refrigerate until firm (at least one hour). Once firm, scoop 1 tablespoon of dough into the palm of your hand and roll into a ball. Continue until all the dough has been rolled into balls.

To assemble the thumbprint cookies:
Whisk both egg whites until frothy. Place the chopped pecans in a separate bowl and keep nearby. Using a fork, lower each cookie ball into the egg whites, rolling to make sure they’re completely coated.

Remove from the egg wash and immediately drop it into the bowl of nuts. Roll or toss until the dough ball is completely coated in nuts.

That last photo reminds me of “Where’s Waldo?” Can your find the cookie? Here’s an example of a perfectly coated cookie ball:

Place the cookies 2″ apart onto cookie sheets (I recommend using a silicone mat or parchment). Using your finger or a round wooden spoon handle, press a divot into the top of each cookie. The bigger the divot, the more caramel it holds.

Bake at 350F for 12-14 minutes, depending on your oven. You want them to just be done. Bake too long, and they’ll start to split and crack around the outside edges which will wreak havoc when you try to fill them with caramel. And we don’t want that. When they’re cooled to room temperature, grab your favorite dulce de leche caramel. I’m using this jar of unholy goodness sent to me by my friend Kat at Tenaciously Yours. It’s sea salt caramel from Trader Joe’s and it’s divine. Ima need a new jar soon. Or two. Or twelve.

Spoon just enough caramel into each cookie to fill the divot without running over the top. They get really messy when they run over the top.

Now grab your favorite milk chocolate and melt it; whisking until smooth. I like to scrape it into a plastic zip-style Glad bag so I can drizzle quickly and easily (plus it makes clean-up a snap). Just twist the baggie to press the chocolate into one corner, then snip the tip and drizzle like a pro. If you want to get all fancy-pants, you can top these with a toasted pecan. I tried it, but I’m not sure I like having my view of that sea salt caramel blocked. Caramel is meant to be seen.

Notes from my personal experience with this recipe:
1. The dough balls (uncoated) can be made and frozen in advance in airtight freezer bags. Just thaw before coating with egg wash & nuts and baking.

2. The recipe called for regular cocoa, but I’m a dark chocolate lover so I substituted the Hershey’s Special Dark cocoa and it rocked.

2. Almonds can be substituted for pecans. And if you’re a Snickers fan, I’m betting peanuts would be pretty tasty, too.

3. The original recipe (as seen on Pinterest) called for using 14 wrapped soft caramel candies, melted down with 3 tablespoons of heavy cream. I chose the jar of sea salt caramel because I had it on hand and it’s delicious.

4. This recipe says it makes approximately 30 cookies. I tripled the recipe for a holiday cookie exchange and it worked perfectly. It made exactly 90 cookies. You’ve got to love truth in advertising.

Pumpkin & Cranberry for the win!

All are great combinations, but near the top of my list is pumpkin & cranberry. Luscious spiced pumpkin paired with tart dried cranberries makes me furiously happy. So when I saw these muffins on Kirsten’s Comfortably Domestic blog, I knew they would be mine. Mine! mwuhahahaha {that’s my evil laugh}

How do I describe these adequately? I don’t think I can. You really have to bite into one to fully appreciate it. They’re soft and delicate with a warm, robust pumpkin flavor. There’s a subtle scent of spice that leaps forward when you raise it to your lips, then the aroma of orange from the glaze leaps for joy just as you sink your teeth into this fall gem. I mean really. They are that good.

Can you smell that? It’s spice and pumpkin and cranberry and orange.

I take it back. These are not good, they’re glorious. And flavorful. And confirmation of why I love the pumpkin & cranberry combo and all things fall.

Speaking of fall, I’ve been on a canning kick. Earlier this week, I put up my second batch of cranberry goodness. It’s thick and loaded with fresh cranberries, dark sweet cherries and raspberries. I’m not sure whether to call it jam, preserves, or cranberry sauce on steroids. Whatever it is, it’s tasty.

While I was mixing up these muffins, it suddenly hit me that if dried cranberries are good, more cranberries are better. In the spirit of “more is more” I spooned a heaping teaspoon onto the top of half the muffins just before I popped them in the oven. Here’s what happened – and I hadn’t even glazed it yet!

Holy smokes, y’all. I’m in love with this muffin.

I’m sending Kirsten a jar of cranberry goodness as part of our Great Jelly Swap this fall. It’s not just that I need her approval for messing with her recipe a little. It’s that I NEED her to experience it firsthand. Because friends & food go together like Cake & Ice Cream. Fritos & Chili. Cheese & Crackers. Eggs & Bacon. Butter & Popcorn. Spaghetti & Meatballs. Mashed Potatoes & Gravy.

One Kitchen, Many Hearts – June

I love our blogger boxes. There’s no other way to say it. It’s like Christmas morning, every other month. For June OKMH Boxes, I received a carton of love from the 45th parallel from Kirsten of Comfortably Domestic. We’ve never met, but we are twins separated at birth (never mind the pesky age difference). She is my sister from another mister. My doppelgänger. And because of that, her box was an exercise in perfection. It started with this card.

This is us in 30 years, and my vote goes to “buck naked”


Fuel for my soul, that’s what this box is.

The first goodie out of the box was this can of chipotle peppers (which we love), a jar of lemons preserved in salt (which I have never in my life tried), and a recipe for BBQ sauce that combines the two. Kirsten nailed this one. I love lemons, we both love barbecue, and TCP loves to grill. I can’t wait to try this recipe and those gorgeous salt-preserved lemons.

Smokey, zingy, tasty goodness – all in one recipe. Very cool.

Next up, a little something for the girly girl in me. Hello summer!

Lips & nails – throw in some mascara & it’s a girly emergency kit.

Then my heart stopped beating when I found these…

Dried cherries from the Upper Peninsula region of the 45th parallel.

If you’re thinking “big deal… dried cherries” then I question how we can be friends (except for my dear friend Kaki – she gets a cherry pass). Seriously, as a cherry lover there are few things as glorious as a gift of Michigan cherries. Canned, fresh or dried – I’ll take them any way I can get them. I’m not exaggerating when I say that a little tear of joy came to my eye when I pulled these out of the box. They are the perfect blend of tart & sweet, dried & plump. I covet these the way some girls covet diamonds. Have mercy, they’re delicious.

This next little gadget blew my mind.

The Cuppow – it turns any wide-mouth canning jar into a travel mug.

As a lover of canning jars AND my morning coffee, my jaw dropped when I saw this. The Cuppow fits onto any wide-mouth canning jar, which I just happen to have a love affair with. In the list of things I hoard, canning jars rank near the top. When I saw this, I did the head slap/why didn’t I think of this thing. It’s so simple it’s brilliant. And Kirsten kicked it up another notch by including my first ‘to go’ beverage AND a handmade travel jar koozie. Seriously. She raises 4 boys, homeschools them all, runs a household, trains a dog and bakes every single day. And she still found time to knit a cover for my travel jar. UH.MAZE.ING.

Knowing my love of canning jars, Kirsten capped my June box with yet another of my obsessions – buttons. Or in this case, buttons in an antique canning jar she found in an antique shop. My mother and I went through these like kids in a candy shop, ‘ooooing’ and ‘ahhhhing’ over each new find. We laughed our butts off when we found a small denture charm in the jar. It looks ancient, it’s a little disturbing, and it’s absolutely hysterical. I loved them all. Here’s a collage tribute to our button fun because every crafty girl loves buttons.

Saying that I enjoyed this month’s box would be a gross understatement. I loved it all. Kirsten’s picks could not have been more perfect. Seriously, these boxes are too much fun. I have a feeling we’re going to need to expand this next year to include more friends. Because everyone loves friends and presents.

Apricot & Marmalade Fried Pies

Texas-style fried pies filled with warm fruity goodness

My friend and favorite Canadian, Karlynn of The Kitchen Magpie, recently put out a call for guests posts for her Pieday Friday series while her family is on vacation.
